Knead bread dough until elastic and almost windowpane stage 2. Divide 10g, add cocoa powder and knead well until smooth. Shape into ball for fermentation 3. Add pumpkin powder to remaining bread dough and knead well till surface is smooth and shape into ball for fermentation. After 1st fermentation, about 45mins 4. Degas bread dough. Divide into 5 x 50g yellow dough and remaining (keep for ears). Cover and rest for 10 mins, bench time 5. Divide each 50g dough into approx 1:2 ratio. Shape into oval and round balls respectively. 6. To the smaller (oval) ball, add thin cocoa strip. 7. Repeat for the rest of the 50g balls. 8. Using the remaining yellow dough, make small dough balls for the ears. 9. Place on baking tray line with parchment paper. Cover gently with cling wrap and rest for 15-20mins for 2nd fermentation. 10. Bake at 160C for about 8mins. Remove the ears, then cover the rest with parchment paper (prevent browning). Continue to bake for another 8-10mins until base is nicely browned. 11. Turn off oven heat, and open oven door while letting the bread rest inside for about 2mins or so (oven drying process). 12. Remove and set on wire rack to cool, away from drafts. 13.
